on my interview letter, it states that I need to show financial evidence.

I assume this means the financial evidence of my sponsor.

Is the 2009 USA Tax return documents of my sponsor sufficent finencial evidence?

Or what other documents must I show?

You need the tax returns, pay stubs for past few months and a letter from your sponsor's employer stating how much they earn and how long they have been employed etc.

Is it "vital"/"important" for the job letter to contain the sponsor's salary?

I already have the sponsors tax return forms which already contain a lot of their income figures.

The job letter also shows how long they have worked for the company

Please advice.

Financial Evidence can mean a lot of things. You may want to take your salary/job letter, recent 6 months paychecks, paychecks of the sponsor, tax returns of the recent years, and any interest/income bearing financial instruments to support the numbers mentioned in your I-864 form.
