You can get your visa renewed anywhere, however your chances are slim and that is why students are always advised to get their visas in their country of origin. However, that is the "ideal" answer. I suggest you contact the embassy in Mexico and ask them their policy on this. If they say you can do this, then go ahead! Good luck!
