You should be okay. Work with your new employer for 6 months atleast.
This is essential to prove that you actually had an intention to work with this employer after getting GC approved.
Save all records such as appointment letter, paystusbs, W-2 etc. which would offer documented proof of you working with this new employer.
From what I have heard, your employment history may be checked when you apply for renewal of green card or for citizenship.
