EB3 or EB2 - which route to go?

I am a British citizen on a J2 visa - my employer is sponsoring me through PERM which has just been submitted online. If approved I realise that the choice between EB2 and EB3 means current visas beign available or many years wait. I am really just a skilled worker but I wanted to know what is acceptable for EB2? I am an Administrative Assistant with 15+ years experience, does that count for anything? Also, if my I-140 is approved before me J visa expires can I apply for adjustment of status/extension of status - I do not need to be able to work, just stay in the US until a visa number becomes available.
