I see in everyone timeline that a few months after they send their AOS, they receive an EAD. Can you work once you get that?? Or do you have to wait until the GC is approved?

EAD is for "employment authorization", so yes you can legally work with the EAD card.

By the way, you do not need to file application/form I-765, which is used to obtain EAD, if you don't want to work now or at least until you get your green card. EAD is received between 40-90 days of filing the paperwork for green card, but green card is received 90-120 days anyway, of course if everything goes well.
Many people obtain EAD so that they can apply for social security number and eventually a driving license than waiting to get all these after receiving the green card. But the truth is- they will need to be visiting all these govt. agencies once again once they would receive their GC. Why? Because if they receive their social security card based on EAD then there would be a notation on their social security account in the system and on the SS card itself which will need to remove it later on once a status is adjusted, and it can be removed only when someone would get a green card. Similarly, if one would obtain a DL then it's very much possible that the validity of that DL will be limited or until EAD is good for, which means another visit to DMV.
