EAD renewal pending, planning to use AC21, how safe?

1)My 140 is approved and 485 more than 6 months. EAD is about 90 days to expire and going to apply for renewal of EAD and AP. Is it advisable to change my sponsoring employer using AC-21 now?

2)Can the employer request for cancellation of EAD, AP for me and my spouse, incase I leave the employer? I know the employer can request to cancel I140, because its the employer who files it.
