My Case
I-485 - Denied
The denial was due to USCIS error. I had applied for I-485 based on the current company's approved I-140. My previous company's I-140 got denied and USCIS denied my I-485 application.

I-290B - Pending.
Applied for motion-to-reopen I-485 and currently it is in pending state

EAD renewal Denied.
Applied for EAD renewal after getting I-290B receipt notice. EAD got denied. The reason being currently I-485 is not pending.

I am planning to stop working. How will I document this and let USCIS know that I have stopped working.

Your inputs will be greatly appreciated.

Writing a letter to the Empoyer informing that I am going on unpaid vacation. Is this sufficient documentation for USCIS? How will I communicate this letter to USCIS?

You do not have to inform USCIS with anything. If you do not work without EAD, which is actually what you should do, you will have no paycheck, no SS deduction ......etc and this is what you need. In case the USCIS want to know and sent you RFE regarding that, I doubt, then collect your document and send it.
