EAD/ Ac 21

I am in EB2 and have EAD/ AP, Pending 485 , priority date march 2005.I sponsored my spouse and child for Adjustment of status. My spouse has EAD too.
I am 180 days past the 140/485 concurrent filing.
Can my spouse start a business in the same field as mine and can I be a full time employee in that business? Do I have to file Ac 21?
What are the risks of doing this???

------------ can be problem, USCIS can ask ability to pay
