My wife changed her job after 180 days using the AC-21 rule. She did not receive any RFE. The GC was processed in regular course without any interview etc. No Hassels whatsoever. There was no delay because of her job change. We had not informed the INS of the change as it is not mandatory by law. If you inform the INS you will almost certainly get an interview/RFE. That is your choice. I have read about another case where the candidate changed jobs BEFORE 180 days and was approved. The AC-21 rule is being used by a lot of people and it is perfectly legal. If you have cleared the 180 day period you may change your job and will still be OK as long as the job title and description is the same as that for which you LC was done. That is very important and also you should be able to produce a letter from your employer to this effect if needed.
As far a getting scared is concerned, that is your individual decision....
