Does it matter when to sign I-751?

I have to send my I-751 On January 11th 2010. It is exactly 90 days before my conditional GC expires.

Does it matter when me and my husband sign the form? Can we do it now?
Or it strictly has to be 90 days before the card expires?

Thanks in advance!

Yes. You can file 90 days before GC expires and NOT earlier than that
UNLESS you file by yourself based on wavier

my question was about signing form. Can we sign it before 90 days period?

Well, it is generally understood that you can not sign it early and send it later. If so everyone signed it next day of obtaining their conditional GC and sent on that window.
Of course, if you do it couple of days early no one will come to know.

Sign and send it any day in the 90-day window before the 2-year card expires.

And be careful about counting the days; remember 90 days is not the same as 3 months.
