wanted to know...

what are the original documents required during the AOS interview?

also, after applying for the 140/485 how many interviews does one have to go through before getting the final card?

has anybody compiled a list of all the documents that we need to present at these (various?) interviews??

Your interview call letter will list the documents required. Those who get RFEs (employment, medical, birth cert or marriage cert) need to take the original docs. Any and all docs are required, otherwise...
Number of interviews depends on the possibility of RFEs..

To reply RFE, if the original documents have to be submitted, such as employment letter, pay slip and etc? Is the photo copy acceptable? TIA
