What happens when you go for CP and the consulate suspects
that the job offer is not valid?
What documents do we need to submit for it?

If you have a real job, then you can easily prove by submitting the company brochures, company financials, etc. You can provide a letter from the company on the company's letter head, which will have company's contact info, phone number, etc.

If the job offer is a fake job from a fake company, then there will be trouble satisfying the visa officer.

Spouse's employment

When going for CP do we need to take any information about Spouse's employment (neither the sponsor nor the primary applicant for GC) other than their H-1B papers and other papers as Packet 4 advises? Please let me know.

If the spouse was in H1b status then documents supporting that will be required. A letter of employment from current employer, and 1-2 latest pay stubs will also help.
