Complicated problem, need help and guidance

I have found myself in a rather complicated situation, for the sake of brevity I shall only explain the main issues of the problem. I am currently a university student (junior year) in Texas however, on December 2006 I was required to renew my student visa. I went back to Mexico City to attempt to renew but was denied twice in a period of time no longer than 3 weeks. The first reason for the denial was the following; I studied at an Texas Public high school on a turist visa, from my sophomore year to my senior year, I made frequent trips back and forth between Mexico and Texas until I finally got caught the beginning of my senior year at the airport. I was allowed to stay but with the condition that I tramit my student visa as soon as possible, which I did and obtained. When I went to renew my visa the lady (which by the way was extremely arrogant, and despot) told me that I needed to provide certain documents in order for my visa to be approved. I submitted the documents required to another person the second time, but this time the other person denied my visa on the basis of "I did not provide enough evidence that ties me to Mexico", which is an absurd statement considering most of my family resides in Mexico City. I do not know if I should try again to renew my student visa or attempt to obtain a K-1 visa this time. I have been with my girlfriend (USC) for four years now and we were considering the K-1 visa and consequently marriage as a plan B. I do not know what would be the best option that gets me back in the States as soon as possible, considering my studies are on hold and (as cliche as this may sound) I miss my girlfriend terribly. I would appreciate any help that I can get. I apologize for the lenght of this thread and thank all the people that have taken their time to read it.
Quick addendum
I find my situation a little ironic per se, considering I am a Pre-Law student with future goals of practicing Immigration Law and helping people with this kind of problems.
 
K-3 visa

I just came across some information regarding K-3 visa, so now I am wondering what would be the best option F-1, K-1 or K-3.
