Changing wife's last name before or after, how?

My wife and I were married in Mexico 3 years ago. In mexico, it is common for the wife to keep her last name (in fact they didn't have an easy way to change the last name) Now we're moving to the United States, and I'm filling the I-130, and I-485 and related paperwork. We want her to take my last name, but all her documents (marriage certificate, her visitors visa, etc.) has her family name... How can I change her last name... just put my last name for her name on all the documents I'm sending? or is there something else I need to do to get it done.

Again, I have not sent any of the documents in yet, I wanted to get this resolved before I did. Thank you.

---best option file her papers with her family name or it appers on her passport and visa stamp, once she gets green card then she can file to change her last name with form I-90
How can I change her last name... just put my last name for her name on all the documents I'm sending? or is there something else I need to do to get it done.
