My I-485 currently is processing at Vermont center.
I'll change my job to Florida. Do I have to change
processing center to Texas center?
 
You don't change the processing center, they (USCIS) transfer your application, that too happens in rare occasions.

If you don't change the address, then your application stays with VSC. However, you are legally required to inform them about your current address.

you can change your address from VSC to TSC.
My 485 was filed at VSC service center.
I did change my address after one year from VSC to TSC.
your case is not going to transfer to TSC.
My whole family cases approved on Jan 2004 with RFE.
Also I changed company twice using EAD at TSC location.

Note : You can keep your current address if that is your relative address and parallel you can metion Florida address as temp
.
 
For address changes, file AR-11 and also call 1-800 number to update address for each pending application.
