The rule governing change of employment while I485 is pending is called the American Competitiveness in 21st century Act (AC21) with the help of which you can change jobs if your I485 has been pending>180 days and the new job is similar to the one on which your labor or 140 was based. The devil however, is in the detail as the interpretation of these provisions may be subjective but a good attorney should take care of this.
