Hi, I am getting a Job out of the US but my I 485 has not been approved yet, this is a better paying job and really want to take it. but am still waiting for the I485 to approve, which seems around the corner, and has been like that for over 6 months. Any ideas should I take this job up

I do not think there is any country other than US needs valid I485 to work in.

You can take the job, but if you want to preserve your I-485 you need to return to the US before your Advance Parole or H or L visa has expired, and keep renewing the visa or AP as necessary (remember that applying for the AP and waiting for it to be approved must be done while you are in the US).

If options presented above are not ideal in your situation, you can also submit a transfer request to USCIS, requesting them to transfer your I-485 to a consulate in your country of origin. Of course, you would then lose EAD and AP privilege.

mmed - It seems you dont read and understand the questions properly. I think you should stop answering questions. If you want to answer - answer them in a right way if you know the answer. I have seen many of your answers in the same manner as above (Meaning less).

And I think many of the people who watch this forum might be knowing what you quoted above.

Sorry that my answer upset you, I think stating the right answer and fixing my wrong one are better for me and for the OP instead. Many people think in this forum that with GC, it is OK to work in other country e.g. Canada for example. Many others with very good overseas offers keep themselves imprisoned in US because of a pending I485 for years and years. Others spending thousands of dollars to keep GC by visiting US few days a year hoping to be USC by that pattern which will never happen especially nowadays. For sure every one is free and can do what ever he/she want and every one has the logic behind that and many out there will till the OP to keep renewing AP and be in US every year to apply for it and either stay or come back to receive it before you travel again and so on. I think this is impractical and may lead to jeopardizing the good offer overseas and the pending I485 itself may be revoked for many reasons (not responding to RFE, I140 revoked by employers …..etc).
My message, which I think many understand it, is just to move on and do not let yourself stuck with an application which may be approved or not or remain pending for years and years. My personal opinion is that we apply for GC to get better quality of life which differ from one to the other, if we can find it anywhere, the GC itself at that time is not by itself is the ultimate goal, still my opinion. I know and I think all of us heard of people give their GC and even USC away because they find better chances outside the US.
For the OP, the answer as stated by others highlighted in bold.
