Can we get 2 appointments for Visa Stamping?

Is it Ok if we get 2 appointments - one in mexico for say June 5 and the other one in Canada for say a week just as backup in case there is some
problem with visa stamping in mexico? Just wondering?
if all goes well in Mexico - The canada appt will then be canceled.
Please let me have your thoughts
 
There are postings in Murthy forum (H1B: Visa Stamp) that people booked 2 appointments one in Canada and the backup appointments in their home country without any problem.
