If I get an approval and a stamp on my passport at the AOS interview, Can I start working, even if my EAD is still pending?

Of course. The I-551 stamp is your work authorization, and your EAD application will probably be denied.

As long as you got stamped, that means you are permanent resident already and you are legal to work now.
