I am the primary applicant and I got my GC for over a year, but my wife's case is still pending.
I want to quit my job and stay unemployed for a while.
will it jeopardize my wife's I-485 if I do so?
any help is greatly appreciated

you got your GC......that means now employment verification should not be asked....since your wife visa is a derivative one.......and you can always say that you are taking a break (every human is entitled to take a break if that is legal (not in H1 status).....

but to tell you the truth......with uscis........its always safe to keep it straight......those guys are pretty dumb.....we need to keep it simple and straight..

It shouldn't. The only potential wrinkle is that they may question your ability to support her and not have her be a public charge.

unless you prove that you have a ton in the bank....enough to take care of 12 months of expenses...

Sure. It's not an insurmountable problem, just something to be aware of and able to answer if raised. It might not come up at all, or it might.
