Can I change job?

This question might already been asked million times, but I can't find any firm information on this website regarding the question so I am sorry to ask again.

My I-140 and I-485 was filed on Feb. 6, 2004. I've received the notice that my I-140 was approved on Sept. 15, 2004. My current company is going through possible big layoff so everyone is looking for a new job. The question is, if I switch to a different company right now what I'll have to do to continue the process? The new company will not provide sponsorship. Thank you!

Using AC21

You can use AC21 rule to change employer. Search for AC21 and you will find all the info in this forum. If your new employer does not provide sponsorship, then you will have to use your EAD, if you have it. If you do not have EAD right now, you should apply for it and also apply for AP as you will need it for re-entry to the US after traveling outside the US.
Even though your new employer does not provide sponsorship, but they will have to provide you with a offer letter stating that this is a permanent position and the salary has to be equal or more than the LC salary. Search for AC21 and you will find all the paperwork required that you need to submit to USCIS.
