Can I apply Greencard for my mother if her passport already expired?

I am currently holding a GC and plan to apply for US citizenship. My mom is currently under B1/B2 visa and staying with me in US. We plan to apply for GC for my mom once I get my US citizenship, most likely in about 3 years. And we like my mom to continue staying in US to wait for her GC application, we do not want her to leave US before getting the GC approval. We need her help badly here in US.

But the problem is: Her passport will have expired before she gets her GC approval, and she has no way to extend her passport in US. If he gets GC some day with an expired passport, is that GC still valid? Can she use the GC and expired passport to leave US for a vacation? If yes, she will apply new passport at her home country during the vacation, but can she come back US with a new passport and a US GC ?
