I have applied I-485 last month. Got the receipt and EAD. Can I change the job with the EAD before 180 days? I am not much familiar with AC21 rules. Please, can someone explain it to me easy way. Thanks.

Yo can change jobs even before 180 days have passed, as long as your case is not adjudicated before 180 days from your receipt date. The only caveat is if you get an RFE for your employment letter/paystubs within these 180 days, you\'ll be in soup.
 
Why soup?

If I can present the pay stab and and employment letter from the new job, would it be enough for RFE?

Your GC will be at great risk if you change your job before 180 days. Different lawyers interpret AC21 differently. Look at other messages at this board. So if you have a choice, keep your job for 180 days. And INS is going to clarify AC 21, no one knows who is going to benefit from that clarification.
