Break between jobs

I am changing jobs and I am wondering if I can take a couple of days off betwen the time I leave my old job and join the new one. Will that be considered a break in employment? Will that affect my 485 / AC21 process? Please advice

It will be a break in employment, which you can do as long as you have a pending I-485. So long as you have a valid job offer at I-485 ajudication, there's no requirement that you remain continuously employed throughout the process.
