Between EB3 485 approval and stamping is it OK to work w/o EAD?
If for some reason beyond our control, couldn't get the EAD extended before the current EAD expires. Thanks.

Of course. You're a permanent resident as of the I-485 approval, you just don't have any evidence of this fact.

Yes once you receive approval of I-485 you will be treated as PR. Going to stamping is formality to actual card.

You do not need EAD after the approval. If you have pending EAD that will be rejected.

I agree with tammy2... I actually asked this question to the officer who stamped my pasport, and he said thay you become a PR in the moment your I-485 is approved.
