Between EB3 485 approval and stamping is it OK to work w/o EAD?
If for some reason beyond our control, couldn't get the EAD extended before the current EAD expires. Thanks.
 
no probs. The moment your i485 is approved, from that second you are a permanent resident. You will receive the plastic card effective the date of I485 approval.
 
you are a PR the moment your application is approved. And legally you are able to work. But the problem is that , if your EAD gets expired in this period, your employer might want the proof that you are a permanent resident. The employer could demand I551 stamp or the actual card. I am not sure if your employer will entertain just the "approval notice".
