Basic Question on I-485 Processing

I have beem following the timings posted by the Service centers and till date I assumed that the date that is provided there for I-485 is either RD or ND [which are kind of close anyway]. However today, while checking my approved I-140 document, I noticed that there was another date - Priority Date which was mentioned as 11/2002. What is this date and is the date that is used determining the processing I-485 application.
