Were you personally invited for the two book chapters or your boss ? (If your boss, it is nice to have on your CV but not really helpful for OR. It would be comparable if you worked as a referee because your boss was invited). Do the citation just cite your paper or are those scientists discuss your results in detail ? USCIS distingush very much between those types of citation. Did you work as a referee ?
I think your qualifications look ok, if you get excellent reference letters (6-8)from absolute independent top guys in your field (academia and industry from arounds the world). They have to be independent (no relation to you or your boss and of course they can't be from your group) and should know you only your publcation or poster on a conference. They will be crucial for your success in OR.

Your credentials seem to fit to be eligible for EB1 OR. do you have a permanent position? for EB1 OR, it is important to have a permanent position (does not have to be tenure track). prepare a nice cover letter (5-10 pages).

If you have permanent job offer/ position then I think you have a good chance, as noted by other members. Do not apply with Post-doc title..
