My wife is in India, travelled using advance parole, which expires by end of Dec'02. Is it possible for me to apply for extension or for a aother parole doc while she is in India?

And also what is the procedure in getting this doc from local INS office? Or else do I have to apply only to the service center where I filed for AOS.

You can apply for another AP. Each AP is considered unique (i.e. no extensions) The form is I131 download it from INS web site. Send Check, 2 photos, I485 receipt and a letter citing why you need AP to service center where 485 is pending.
 
I think you cannot apply for your Wife AP while she is NOT IN USA, according to what I read, to apply for AP one has to be in US.
Many Local INS office provide AP in one day, Check with your Local INS office or a immigration lawyer in your Area but one has to Visit personally for the AP if you need to get it through Local INS office, I know about Newark NJ, Baltimore MD only, they need the applicant for AP to visit personally
