Can I apply for I-485 and AP and then My wife can go to India before AP is approved ? Later when AP is approved , I can Mail approved AP to my wife so that she can enter US using AP. Do you have to have AP in your possesion while exiting US ?

Yes

INS FAQ on AP strictly says you should have the AP before going out. You could get an interim at the local office if it is urgent.

Hi,
I have a friend who went to India after applying 485/EAD/AP. His apartment mate mailed AP approvals and my friend came using that without any questions asked at POE.
But note that this was pre-9/11.
