AOS or CP after PERM EB2 labor?

Recently my labor got cleared through EB2 PERM. Now I should apply for I-140 and I-485(or consular processing). If I apply for I-485 then I will get my EAD but final GC may take time. If I go for consular process how fast it could be. How much time does I-140 takes? In other words how this works? Any help is appreciated.
 
it all depends if you are in the US and want to stay there to continue working. If not, CP is fine.

I would suggest I-485 rather then CP as EB2 mightl get retrogress in Sep 1st as per USCIS vasa bulletin. If you go for CP and visa number is not available then you can't use AC21, EAD, AP etc, in other words you can't change your company till you get GC. In I-485 you can with some limitations as soon as you pass 180 days of I-485 filing.
