I got my GC ~1 year back and If I leave the employer, should I get any documents related to GC/immigration? Any specific documents that would help me in the future (like dual-citizenship, US citizenship, travel etc)?

TIA!

I can not think up anything directly related to immigration.

If there must be some documents stating the reason for leaving,
make sure the reason does not reflect any dislike of the employer

This is America. Not only are you free to leave a job any time you like, most companies will be too terrified of a lawsuit to say anything bad about you.

I have happily mentioned that I left a place because I didn't like it. The only employers who would be frightened and alarmed by such a statement are employers that neither you nor I would wish to work for.

I mean the employee should not say he dislike the employer
and even have that entered into permanent documents. Later
the employer can use that to show he did nothave the bona fida intent
to work for them at the time of getting GC. The intent at the time
of getting GC is usually shown by circumstantial evidences. and If
one year later you told the employer at the leaving that "I hate you and that
is why I decide to leave" and even make it part of wriiten docuemnt,
then it is circumstantial evidence
