After FP and Queries, Can I switch the job

I have a question. Since the FP is done and the all the quries have been answered, and the card is on the way - may be 4 or 6 months - is it possible for any one to quit the current employer and change the job. I can say that I do not have any problem with my current employer. Have you heard any cases in this situation. Please help.

Following are my I-485 details
RD 4/4/00
ND 5/2/00
FP 12/26/00
RIR EB2 category
My attorney applied 485 along with my wife and son. My son will turn 21 this August,application was filed as "Aging out application". can any one tell me if my application is prioritized because of my son or what do I do so that application gets approved before my son turns 21...this is so critical!!! Will a letter from Senator be helpful??
