We filed taxes together for the last 2 years, and will file this year (2005 taxes) together as well. Can we just send copies of our tax forms and maybe some bank records as proof?

Yes you can use your income to justify your wife's affidavite of support. Yep, it is confusing in I-864 but read the instructions in I-864A and the instructions are very clear on what you need to fill out if the immigrant is using his/her own income.
My case is similar to yours although my USC wife works but has been employed only for a year. But I have been working for five years and have shown my income in the Affidavit of support. However, like you, I was confused too and did not submit the I-864A but instead wrote a letter explaining my income details and attached my tax returns. But later on I learnt that it (I-864A) was required for my income to be considered. Now I have to wait and see if I get an RFE for it.
So submit I-864A if you need to show your income in the affidavit of support.
Better to be safe than sorry.
