My 140 was applied in Aug 2003. 485 was applied in Feb 2004(Recieved Date Feb 13, Notice Date Feb 18) while 140 was still pending, as concurrent application.
My 140 was approved on Apr 28th. I got EAD and AP also.
My contract at client's place has ended on Jun 29th and right now my employer is looking to find me another project.
What is the date when I can use AC21?
What are my options if my employer terminates my employment before that date?
Can my employer revoke my 140? (It has been approved already)

180 days after filing 485 - you can use AC-21.

Employer can request to revoke 140 before that.
 
I am worried about the validity of my legal status in case my employer terminates my job.
What would be a good option for me?
Should I take a vacation for a few weeks and come back after the 180 day deadline is crossed? If anyone has been in a similar situation, I would appreciate some advice.
 
There is no issue with status. Pending 485 (AOS) is good status- you don't need to have a job for that.
180 days is from RD (not ND).
