As I was going over paperwork today, I realized that my husband ordered his ACCOUNT not TAX RETURN transcripts from INS. We've had them over two weeks now but didn't realize they were 2 different things. The account transcript shows pretty much all necessary info such as adj gross income, filing status, tax paid etc. Would it be sufficient for INS? If we order tax return transcripts today, that means we have to wait for at least 10 more days. I was hoping to get the package out in mail by Monday.

Tax returns are fine...

Tax returns will be fine, so if you have them, you are in good shape. It is not necessary that you get IRS issued tax transcripts. If you so desire, then you can order them, but it is no a requirement that you send the tax returns copies.
One thing, you don't want to send your forms without all paperwork, as this is going to delay your process with an unnecessary RFE.
Do you have the initial copies of tax returns which your tax preparer gave you when you filed taxes? 
If so, you are in good shape with regard to mailing these forms...
