Am I eligible to change employer using AC-21

Here is my info:
Labor filed October 2002 in Minnesota and approved mid may 2003.
Filed I-140 at the end of June 2003
Filed I-485 in August 2003 (File semi-concurrently due to medical certificate delays)
I-140 approved December 2003
I-485 still pending. Have ead.

Can I switch to another employer because its been more than 180 days from I-485 filing.

How does the 180 day count? From receipt date or notice date of I-485? should it be from I-140 approval date?

Can I take job in different state?

I have good opportunity from a big client. Its a permanent position. salary is 10k less but I am fedup working with consulting firms. I need a stable job (stable in the sense like no tricks or abuse) and I am not transferring for more salary.

I need to accept the offer by tomorrow.
