As you told that if AC21 is not applied it will be approved for old employer. what does that mean.
---------employer X filed I-140 for you for future permanent job and you filed I-485 based on that job offer of X, you intended to work with X at the time of filing I-485, so if I-485 is approved you need to work with X, if dont work with X will USCIS not think that it was fraud on your part just to get GC through X and not working with X after GC approval? if you are eligible for AC21 then invoke AC21 BEFORE I-485 gets approved if you want to work with Y after I-485 gets approved

Many persons do not file AC21 , you mean that can create issue.
------------ask them, may face problems at the time of Citizenship or GC reneawal and if employer sends complaint they can be investigated
What will happen if 485 gets approved while you were changing job and planning to send AC21.
