AC-21 portability

I & my wife have EAD & 1-485 is pending for more than 180 days. I got I-140 approval also.
I want to change my job with AC-21 portability. I am getting offers for same or similar job. But I am pretty sure that my current employer will revoke my approved I-140 when I change my job. If that happens, will I get GC through my new employer or my I-485 get reject? Should I take H1 B visa again and go through the same process again for the GC.?How often the INS rejects the approved I-140 (in AC-21 portability case)when the employer revokes the I-140 ?My wife works on EAD.
I did not accept the new offer because of fear.Please help. I am in hyper tension.

----- you are eligible for AC21 if I-140 approved and I-485 is pending more than 180 days AND you get/find future job in same skills or job duties

-----if I-140 approved and I-485 is pending more than 180 days AND you get/find future job in same skills or job duties then the USCIS is NOT going to revoke the I-140, once you change employer and join him, send AC21 letter and update USCIS
My wife works on EAD.
---- no problem, she needs valid AP approved in Hand if she has to go out of US and should be back before AP expires
