I got my green card and left back for the first time, I noticed that no stamp is put in my passport when I left, How can they know when I left ?
 
they know, either via manifest (as mentioned below) or when they swipe your passport. Once you re-enter, your GC usually gets swiped.
If you have the intention to eventually naturalize in 3/5yrs, consider creating a word/excel file to log your travel abroad dates (date left/reentered, countries visited). It can save you lots of guessing games when you file; I did this for our GC travels. Especially useful for our trips across the land boarder to Canada where our PP never gets stamped.
