485 filing without Employment offer letter?

Is there anyone in this group who has filed 485 without the employment offer letter?

IS it okay to do it?

what are the chances for RFE? if the RFE comes after 180 days, if we give the employment letter of a similar job with another employer with pay stubs.. is that going to be acceptable?

I am not sure if INS accepts applications without employment letter.
