485 Approved. PP Stamped. When Can I switch my Job?

Hello,
I got my 485 approved in Nov and got my passport stamped last week.
When would be safe to switch my job?
What does the law says?
I am really tired of travel and now I am going to get a local job but I want to make sure that it doesnt affect my GC process.
