As soon as your extension is filed you are in status. You could have been out of status only in between the period of (your h1 b expiry date + 10 days) and date of extension filing. So don't worry you are completely in status.

I have heard that even an ex-colleague or ex-manager who may work in a different company now may give an exp letter for you. It should suffice.
