Wbat exactly is wrong with the validity date? I've read that EAD validity dates tend to be EITHER of the following, depending on the service center:
(a) Day after expiry of previous EAD
(b) Date of issue.
If the validity date on your card is either of those, I doubty there's any error...
Yoda, your wife won't lose H4 status by getting an SSN based on her EAD. People do this ALL THE TIME. Nagakoosu is just plain wrong on this. However, you have to decide who to believe.

I've read elsewhere that failure to register is an absolute bar to getting US citizenship, ever. So it seems like it would be very important for your son to follow up on this promptly.
There were RFEs on 3 out of 4 EADs in our family. They were basically for copies of information that had already been sent. Sent the requested info and the EAD was issued quite quickly thereafter, in all 3 cases. Conclusion: RFE on EAD is not so unusual; try not to worry about it.
What matters now, though, is whether or not, in addition to fingerprinting all your fingers, they additionally digitally captured (a) a photo of you, (b) your signature, (c) a single fingerprint. The photo etc. are for producing the plastic card.

Ellada, I think your husband's H4 is extinguished. He is now just an "adjustee" which is fine, unless he wants to travel. For travel, he'd need an AP.
