The effective date for the new EAD and AP is the data when they got approved. That means there may be somehow overlap for you new and old EADs and APs. So, if you have to wait for your 484 for 2 years, you will 3 EADs and APs.

Online message would not change after approved. Your CARD is ordered already after you got stamp. You are supposed to sign and FP a form (551?)when you get stamp, that is the form for ordering your CARD. You don't need to do anything, just wait for the mail.
I was asked for EADs and APs. However, the officer did not check it. My feeling is they just get whatever you have at that time.
Again, your case is already apprioved. There should not be any issue.
I filed 140 by EB11 and got the RFE for my 485 recently. Even if EB11/NIW is independent of employment, you will have problem if you don't have job now. More important issue is you have to explain you are working at the same field as what you applied for 140.
You have to have the notice letter to get the stamp. The letter will show you where you need to go, usually it is the local office. You can go there any time.
