My husband i-485 [thru my employment] has been pending for over 1 year
Mine [thru employment] was approved on 9/5/7

Normally it take around 5-8 weeks. However, you must to be on top of it. Mine took forever and then I went to their office again, they told me they have lost my paperwork and I had to fill their forms again.
After the 2nd time it took around 10 weeks.

If you quit your job that might seem like you were just waiting to get gc and USCIS might doubt your intent, but in order to do that they would have to review your file and they wont do that unless you apply to be a citizen.
They wont review your file in an airport, there is no time for that...

you cannnot use ap because you have been over 180 days in the country without status, so if you leave when you try to re-entry you will be subject to the 10 year ban.
Do not leave the country under any circumstances until you have that GC in hand. You wont be able to reentry
