Help! When should we apply?

My fiance is here on a work visa. The job he has requires him to work in different cities and states for 10 month's straight. While he is in our state (Tx) we'll get married. We've already picked a place and date (Feb.20, 2013) after we marry we want to apply for a Adjustment of Status . The only problem is after we marry he still has 8 more month's of travel left before he's done with his work contract. Here's our dilemma:
When should we apply. I know it takes a couple of month's to get the interview but we don't want to apply if he can't make the interview. Also his work visa expires after his contract is up. So should we wait until the contract is up or should we apply the last 3 month's that he's working and he can just stay here once his visa is up?
Also I live with my parents (they want us to save our money while he's working and traveling. That way I won't be living alone while he's gone and we can have a nice nest saved up when he's done to get our own place) will living with them effect our application since we can't show we share a lease?
Another thing is once we're married how can we get joint accounts and credit card's if he doesn't have a social and is here on a visa.

Thank you so much guy's I've been asking around and no one will give me a straight answer with out a fee. Any information you give will be appreciated even if it doesn't answer my questions.

I'm a waitress at a restaurant and make pretty good money
I have a car note amd want to add his name to it. But he can't drive and doesn't have a license will it matter?
We plan on getting life insurance naming each other beneficiaries
We have plenty of pics of us together but none of our families (his is in a different country)
Our phones are in my name on my account

Unless he's a diplomat, he needs a Social Security number if he's working in the US for 10 months straight. He can use the work visa to apply for a Social Security number, if he doesn't have one already.

I'm apologize. I meant to say he work's for 9 month's and then they usually send him back to his home country for 3 month's and then they bring him back.
So he can use his visa and apply for a SSN. Even if he's still a immigrant?
 
What kind of visa is he using? If it's a business tourist visa (B1), they only allow staying 6 months at a time, and usually after those 6 months you have to stay outside the US for a few months before being allowed to return again. There are restrictions on what type of activities can be done with that visa, and one cannot obtain an SSN based on that visa.

However, if it's a genuine work visa like H1B or L1 or E1, he can stay for a longer time, and that visa can be used to obtain an SSN. In fact, he's required to get an SSN to work in the US with those visas.

Different visas have different restrictions and benefits with respect to traveling and adjustment of status, so knowing the type of visa he has is an important factor in deciding when to marry and whether to pursue AOS in the US or interview for the green card outside the US at a consulate.
 
He's here on a H2B visa and he does have a social.

Good. So he can use that to set up a joint bank account with you. You can still keep separate joint accounts if you want.

One problem is that H2B is not a dual-intent visa like H1B, so once he marries you he should not leave the US until he has Advance Parole or the green card itself because being married to a US citizen is grounds for refusing entry with the H2B.

Advance Parole takes about 2-3 months to be approved. Make sure he applies for AP along with the adjustment of status paperwork.
