Add wife for 485

hi,
I just got married in Nov. I filed for my 485 in EB3 in July 2007 and I got my EAD . My wife got her H4 visa till Dec 2010.
Now, can I file 485 for my wife in Dec 2007?

you have to wait until your prority dates become current.

.... and I think you have to be on H1 and not use your EAD untill you file 485 for your wife.

Don't use your EAD it will invalidate your H-1B. Get everything done medicals etc for your wife then when your PD is current file your wife immediately. Once your wife is filed and has her own EAD and advance parole then you should consider using EAD.
Note if she does not intend to work then advance parole for her, so she can travel if needed.
