Need advice H4 to F1, urgent!

my wife is on H4 visa currently. She just got her admission with assistantship and as I understand to avail that she has to transfer to F 1 visa. The Fall term starts on August 20th and it is May 28th today. What would be recommended, is there enough time left to apply for adjustment of status or should she go to either canada/mexico or india for the F 1 visa. Would really appreciate someone's response as we have to decide in a day or two to let the university know.

Just to add, I have been on H1B for 2 and half years, haven't started the gc process as yet. Before that I was on F1 for 2 years doing my MS. Basically the questions I have are:
1. Is it advisable for my wife to go to India for the F1 stamping given that I have been in the US for all this time and she has been here on H4.
2. Does some one have experience going to India and getting the H4 to F1 stamping done.

Would appreciate someone's response.
