I am about to become a US citizen. At the same time, I have received an employment offer by a company in India, & I am planning to take it & move to India.

The problem is that OCI takes 3-4 months, & obviously this company won't be able to wait for that long.

1. What if I keep my Indian passport instead. I know that I am not supposed to do it. But what are the risks/consequences of doing this.
2. I've checked about employment based visa with the consulate in San Francisco, & they replied via email as below:
"That's only when you are employed in India by a US company."

And also I won't be able to work in India with any other visa. What should I do in this situation? Please advise.

PIO might be a better option for you since they do it pretty quicky. I think you can work on PIO if I am not mistaken!
 
Your best bet in that case would be a PIO card, which should take less than a month to be in your hands. (Assuming your new employer is willing to wait atleast that much).

You can always "upgrade" yourself to OCI status later, in India....
